Instructions
Preheat the oven to 375°F.
Whisk the dry ingredients together in a medium bowl. Whisk the flour, baking powder, baking soda, and salt, then set it aside.
In a separate bowl, mix the butter and sugar for about 2-3 minutes until it's light and fluffy.
After that, add the remaining wet ingredients: the egg, vanilla, lemon juice, and lemon zest.
Mix the wet and dry ingredients together until you can't see the flour anymore.
Portion into 1 1/2 inch balls and place them on a baking sheet, 2 inches apart.
Bake for 10 to 12 minutes until the edges look done; the center should still be a little soft.
